Garlic Mushroom Pasta

INGREDIENTS

  • 2 tbsp oil
  • 2 cloves garlic diced
  • 20g brown onion sliced
  • 60g sliced mushrooms
  • 250g cooked spaghetti pasta
  • 1/4 tsp salt
  • pinch of pepper
  • 1 tbsp Italian parsley finely chopped
  • 1 tbsp vegan parmesan
  • 2 tbsp Sauvignon Blanc to deglaze optional
  • 1 tsp Chilli Crunch optional (for maximum umami)

METHOD

  1. Heat up the oil in pan, spread evenly.
  2. Add in the sliced onions and soften in pan.
  3. Add in the chopped garlic and cook until fragrant.
  4. Add in the mushrooms and cook until soft and reduced in size.
  5. Optional step to deglaze the pan with a splash of Sauvignon Blanc.
  6. Add in seasonings; salt and pepper.
  7. Continue cooking until well combined.
  8. Add in cooked pasta and mix in.
  9. Continue to cook and stir to combine well.
  10. Plate up and add parmesan, parsley and season to taste.

Bonus step: add your favourite Chilli Oil to elevate the flavour.
