PREP TIME: 10 MINS

INGREDIENTS
- 2 tbsp oil
- 2 cloves garlic diced
- 20g brown onion sliced
- 60g sliced mushrooms
- 250g cooked spaghetti pasta
- 1/4 tsp salt
- pinch of pepper
- 1 tbsp Italian parsley finely chopped
- 1 tbsp vegan parmesan
- 2 tbsp Sauvignon Blanc to deglaze optional
- 1 tsp Chilli Crunch optional (for maximum umami)
METHOD
- Heat up the oil in pan, spread evenly.
- Add in the sliced onions and soften in pan.
- Add in the chopped garlic and cook until fragrant.
- Add in the mushrooms and cook until soft and reduced in size.
- Optional step to deglaze the pan with a splash of Sauvignon Blanc.
- Add in seasonings; salt and pepper.
- Continue cooking until well combined.
- Add in cooked pasta and mix in.
- Continue to cook and stir to combine well.
- Plate up and add parmesan, parsley and season to taste.
Bonus step: add your favourite Chilli Oil to elevate the flavour.
